HerbaFabrica is an urban farm specializing in hydroponic cultivation of microgreens. By growing in a controlled environment, it creates ideal conditions for plant growth. The microgreens receive optimal lighting, and the hydroponic system saves up to 90% of water compared to traditional farming. Unlike conventional methods, HerbaFabrica doesn’t need to use chemicals, nor does it depend on weather or seasons.
This mini farm is located in Holešovice, meaning their micro-vegetables don’t travel hundreds of kilometers to reach the plate—just a few blocks to friendly restaurants. The microgreens are always served perfectly fresh, as they reach the chefs still growing. Instead of soil, they grow in a substrate made of biodegradable fibers, and chefs harvest them right before serving. You can taste them, for example, at several Prague establishments: Bar Cobra, Bistro Monk, Estrella, Kavárna co hledá jméno, booze_food, Fresherie bistro, Kavárna DD, Levain bistro, and more.
